In the Kitchen: Mango Pineapple Salsa

In order to save time with grocery shopping, we get a weekly delivery of fresh organic produce. It comes directly to our door and is a mix of local and not so local produce. It has cut down on the amount of grocery shopping trips I need to make. Which is a must these days with gas prices being so high and my time as a work at home mom at a premium.


Recently we have been getting a mango in each week’s box. I love mangos and my daughter does too. It can get a little boring to eat them plain though. Someone suggested I put them in salsa and oh goodness, it is such a treat. This is a wonderfully sweet treat and while it is not something that your kids may like or could help make in the kitchen, who says they should have all the fun? Here is the recipe:

1 mango peeled and cut into cubes
1 small can of crushed pineapple
bunch of green onions, chopped using only the light green portion
2 tablespoons of fresh cilantro, chopped
juice of 1 lime
1 teaspoon of salt

Mix all of the ingredients in a bowl. Allow to chill in the refrigerator for one hour or overnight before serving.

I serve this with cinnamon sugar pita chips. You can either find them in the store or make them yourself. This is something that your kids will probably love.

Mixture of Cinnamon and Sugar

Preheat your oven t o 325 degrees. Brush oil onto a cookie sheet. Cut the pita bread into wedges and lay on the prepared cookie sheet. Brush the vegetable oil on the pita bread and sprinkle with the cinnamon and sugar. Bake for 10 minutes until crisp and brown.
