Fun in the Kitchen: Pancakes

On Sunday mornings, my dear husband and daughter have started a bit of a tradition. While I get to sleep in or enjoy a long and uninterrupted shower, they are busy making pancakes from scratch.


My daughter gets her own bowl and spoon and helps my husband to measure out the ingredients. He asks her what comes next and she will excitedly yell out the next ingredient. Applesauce is her favorite as she gets to eat a spoonful after they are finished adding it to the bowl.

Pancakes are such a versatile dish and they do not have to be enjoyed just at breakfast. There has been many a time when we have eaten them at lunch and dinner. Plus leftovers can be frozen and enjoyed later. Here is my husband’s homemade pancake recipe:

1 cup flour ( any combination of whole wheat and all purpose flour will work)
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1 egg
1 cup milk
2 heaping spoonfuls of applesauce (probably ¼ cup)

Add all of the dry ingredients in a mixing bowl and mix together with a whisk. Lightly beat the egg in a smaller bowl and then add the milk and applesauce. Whisk till slightly frothy. Pour over the top of the dry and mix till it is just combined. It may still be lumpy. Pour batter onto hot griddle in circles. You can also find pancake molds at the stores to make neat shapes. Flip pancake over once bubbles appear on the surface. Cook till they are golden brown on both sides.

The next best thing to making pancakes for my daughter is eating them. We love to eat our pancakes with maple syrup and applesauce. I know some people enjoy them with jam.
